The Processing Stages

We monitor every processing stage to comply with the strictest health regulations, while remaining faithful to our traditions and old techniques


Selection occurs at a controlled temperature (12 °C), anatomic cuts are processed to be sold as such or are intended for other processes.

This process also occurs at a controlled temperature. We produce and stuff various types of mixtures for the production of fresh and aged products.

We age our products at our plant in Val d’Arzino, which is a particularly suitable location for this processing stage, due to its position.


Our fleet guarantees on-time and efficient deliveries to all the delicatessen shops, butchers, food and wine shops, and supermarkets in Friuli, and Eastern Veneto.

Our Territory

The perfect microclimate of our territory allows us to make a unique product.
